Captain Coby Bailey won Season 4 of The Great American Recipe on PBS with a Cajun-inspired menu featuring cornbread-stuffed chicken over grits, and firehouse cobbler for dessert. He is a fire captain from Lafayette, Louisiana, who showcased his Cajun cooking skills throughout the competition.

  • Chicken: Coby used large boneless, skinless chicken thighs stuffed with a cornbread mix.

  • Andouille Cream Sauce: The stuffed chicken was served over grits and topped with a creamy andouille sauce.

  • Sides: The entrée was accompanied by coleslaw and "Grandma Millie's potatoes," a family heirloom recipe.
