For more than 27 years, he has served with the Lafayette Fire Department, the last decade as captain, bringing the same dedication to the firehouse that he brings to his family table.
Roots in Cajun Tradition
Coby’s earliest culinary influences came from his mother and grandmother, both remarkable Cajun cooks. In their kitchens, he absorbed not just recipes, but a philosophy: cooking as a way of life, a link to heritage, and a means of bringing people together.

From Service to the Stove
After serving in the U.S. Navy during Desert Storm, Coby returned home and found his second calling in the fire service. Through the years, his passion for food never wavered. In fact, it grew—fed by tradition, community, and his drive to carry on the culinary legacy he inherited.
